March 23rd is National Tamale Day! Today's recipes are simple but a fun way to spice up a simple side dish. 

 

Grilled Pineapple Rice | this was inspired by pineapple fried rice and chipotles oh so yummy cilantro rice. 

White Rice 

Grill Pineapple 

Chopped Cilantro 

Salt 

Lime 

Instructions: I didn't give any measurements because I feel like this dish is based on ratio preferences. I used trader joes microwavable rice (cooks in 3 minutes and no mess. Grilled pineapple on a very hot cast iron grill till all the edges were blackened ( you can coat them with an oil before to help prevent sticking). Let the pineapple cool and then slice them into small bites. Toss in with rice, cilantro, and top of with salt and lime juice. 

Chili Roasted Zucchini

4 Zucchinis 

Chile Powder

Salt 

Cast Iron Skillet (or roasting pan)

Green onions 

Cojita Cheese

Instructions: Preheat the oven to 400 degrees. Chopp the zucchini into small to medium dice. Coat them in olive oil and then toss in chili powder and salt. Place evenly in a cast iron skillet. Roast between 15-20 minutes. You may want to turn them halfway thru cooking. Top it off with green onions and crumbled cojita cheese.
