Here at The Tamale Company we are huge fans of Eggs! We always make the joke "put an egg on it" Without a doubt it the meal feels like it need that something "extra" we fry or poach an egg. This is our number #1 suggestion to our customers when they ask " How do you recccomend I serve the bean tamales" We always go straight for the egg! Here we have taken 3 Southwest Vegan Tamales, roasted a handful of cherry tomatoes // in the oven for 400 degrees for 15 mins with olive oil and salt // then we top it off with a sunny side egg! If you are wanting to add some more protein, we suggest adding flank steak with Chimichurri sauce.
